To start you will want to prep all of your ingredients. Peel and cut the carrots, slice the mushrooms and onions, and season the steak. Make sure to take your steak out as it will cook more evenly when it is near room temperature. Start cooking the carrots first.
Honey Glazed Carrots
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Yield: 2 servings
Ingredients

about 2 1/2 cups
pealed and cut into about 1-2 in pieces of carrots

2 cups
water
-
1/2 Tbs
raw local honey
-
2 Tbs
water

Wash your carrots and start peeling. I cut the ends off.

Put them in your pan and add your 2 cups of water, you just want enough water to cover the carrots.

Place a lid over the pan. Put your temp on around medium to medium high.

Let them cook for about 15 minutes.

Take the lid off and let them cook for about five more minutes until there is not water left.

Then add the 2 tablespoons of water and the half of tablespoon of the raw honey.

Let that cook a little and lower your heat.
- Walla! Yummy glazed carrots!
Caramelized Onions and Mushrooms
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Yield: 2 servings
Ingredients

1 Tbs coconut oil

medium onion- cut in half and sliced

package of mushrooms- used shiitake this time

Put about 1 tablespoon of coconut oil in your pan.

Start heating the pan, on medium low to medium. If the onions start to brown to quickly make sure to lower heat!

You can chop or add smaller mushrooms whole. I used shiitake this time but baby bellas and white mushrooms work well too.

Add those to your pan and cook them for a couple minutes.

Add your sliced onion.

Season with salt and pepper.

Then cover.
-
Check them every couple minutes and stir.

Once the onions become a tan color and are soft, they should be ready.

Can taste them to see if they are to your liking too.
- These taste great with steak, sauteed kale, or even eggs!
Now on to the steak!!
Steak
Prep time: 5 minutes
Cook time: 12-20 minutes
Total time: 17-25 minutes
Ingredients

steak- ribeye works well or any other cut

cracked black pepper

sea or Celtic salt

Take the steak out of the fridge to let some of the chill off of it. This lets it help the cooking process as it will be more even if the middle is the same temperature at the outside.

I used ribeye but I other cuts will work well. The cooking times may be different so keep that in mind and it also depends on how well you want your meat done. We like ours medium, which is a pink in the middle.

Season your steak liberally with pepper and sea salt and rub in on both sides.

Now that your pan is hopefully nice and hot ( I use medium temp on my electric stove) place your seasoned steak carefully on the pan.

Make sure to be careful and not get splattered.

For my cut of steak, I cooked mine for about 6 minutes on each side.

Do not keep flipping over as you want a nice crust on the outside.

Do not cover either as you will steam the steak instead of searing it.

Now that you have cooked the steak, you can check to make sure it is the cooked to your liking but do not slice it open.

Let the steak rest! Let it take a little nap! Around 8-10 will do otherwise you lose all of the lovely juices and end up with a drier steak. :(

Now that the steak is up and ready to be eaten cut in and enjoy!
